eggplant 003 Tortang Talong is very common breakfast dish in the Philippines. My mom used to cook it for us all the time, growing up. I find it really tedious back then to prepare this dish considering especially that you prepare it in the morning because first you have to grill the eggplants, then peel them and mash them, add spices and fry. But being here in America, everything is convenient so it is a little bit less tedious now. 🙂 It doesn’t matter really because I just love this dish.

This is best served with steamed rice and dip the patty in ketchup. I personally love to eat them with sliced fresh tomatoes and like everybody else I have learned to eat this anytime of the day, breakfast, lunch or dinner!

chicken adobo

My chicken adobo is really what started it all. Whenever I cook for potlucks at work it always runs out first and it has gotten really popular that people would ask me to cook them.

Early this January we had a cook off competition with 12 different team members cooking different dishes and I won 2x in a row.

I ran into one of my old staff from the previous branch I managed and he asked me when I will cook adobo again so I thought I’de really turn the hobby of mine of cooking for people into something!

This chicken adobo is made of all natural ingredients and home cooked with lots of love!
